Pecan Cookies

Steps

In a large bowl, sift together flour, cocoa, and salt, and mix well. In a smaller bowl, use an electric mixer to beat butter and sugar until fluffy. In another bowl, whisk together egg yolk, milk, and vanilla. Mix both mixtures into the flour to form a smooth dough without lumps. Cover the bowl with the prepared dough and refrigerate for at least one hour.

Heat sugar in a deep pan with a thick bottom. When the sugar begins to melt, stir vigorously with a wooden spoon. As soon as all the sugar is melted, add butter to the pan and stir until the butter is melted. Remove from heat. Count to 3 and, while stirring, gradually and carefully to avoid burns from the steam, pour in the cream. Stir until you get a smooth and uniform mixture.

Place small paper muffin cups on a baking tray. Preheat the oven to 180°C. Beat egg white with an electric mixer until frothy. Place chopped pecans in a deep plate. Shape the dough into 2.5 cm diameter balls with your hands. Dip the balls in the egg white, roll them in the pecans, and place them in the muffin cups. Drizzle each ball with the prepared caramel glaze.

Bake the balls for 10 to 12 minutes in the preheated oven. Arrange the baked cookies on a serving plate and serve.
