Steps

Wash the lemon thoroughly and dry it. Grate the lemon zest. Prepare the dough: in a large bowl, beat the egg, add sugar, lemon zest, and butter, and mix everything into a smooth mixture. In another bowl, sift the flour and mix in the vanilla sugar and baking powder. Then slowly add the dry ingredients to the smooth mixture and knead everything into a dough. Wrap the dough in plastic wrap and place it in the refrigerator for 30 minutes.

Meanwhile, wash the persimmons, clean them, peel them, and cut them into pieces. Place them in a large bowl and mix in sugar, vanilla sugar, breadcrumbs, and plain flour.

Preheat the oven to 180 °C. Take the dough out of the refrigerator and roll it out to 5 mm thickness. Grease a pie dish and place the dough in it, pressing it well against the bottom and sides of the dish. Trim the excess dough and knead it again, then make long rolls from it to create a lattice. Fill the pie dish with the persimmon filling, smooth it out, and cover it with the lattice made from the remaining dough.

Place the pie dish in the preheated oven and bake the pie for 35 minutes. Take the baked pie out of the oven, let it cool, cut it, and arrange it on a serving plate. Serve.

Advice
