Steps

Prepare the salty shortcrust pastry according to the recipe, shape it into a loaf, flatten it, divide it into four parts, and refrigerate for half an hour.

Cut the Edam cheese into small cubes, grate the Emmental cheese, and crumble the gorgonzola with a fork. In a large bowl, whisk the eggs together with the milk using a hand whisk. Add all three cheeses, sour cream, salt, pepper, and paprika. Mix all the ingredients well.

Preheat the oven to 200 degrees Celsius. Roll out the shortcrust pastry on a floured work surface to about 0.5 cm thick and use it to line a well-greased and lightly floured pie dish. The pastry should slightly overlap the edges. Gently press the pastry with your fingers against the bottom and sides of the dish, then prick it with a fork in several places. Use a rolling pin to firmly press over the edge of the dish to trim off the excess pastry and create a nice edge. Pour the cheese filling onto the pastry.

Place the dish on the lower rack of the oven at the beginning of baking, and move it to the higher rack halfway through. Bake the pie for about 30 minutes until it turns golden brown.

Remove the baked pie from the oven and let it cool slightly. Cut it into pieces of any size, serve on plates, and enjoy.

Advice
The pie can also be baked in a rectangular baking dish. The pie can also be prepared with puff pastry. Instead of gorgonzola, you can use roquefort.
