Pineapple Tarts
Golden yellow buttery pineapple tarts are served by the Chinese during the New Year. This recipe makes 24 tarts.

Ingredients

Prepare the filling. Drain the pineapple chunks and quickly blend them in a multiprocessor (10 seconds). Save the syrup from the compote and use it for another dish. Place the pineapple and sugar in a pot, set it to medium heat, and cook until almost all the liquid evaporates and the mixture turns golden yellow. Stir continuously with a wooden spoon to prevent the sugar from burning.

Taste the mixture. If the pineapple filling isn’t sweet enough, add a bit more sugar. Mix the cornstarch with a tablespoon of water in a bowl, then add it to the pineapple mixture. Set the pot aside to let the filling cool. Once cooled, store the filling in the refrigerator.

Prepare the dough. Sift the flour, cornstarch, salt, and sugar into a bowl. Add the cubed butter and egg yolks. Quickly knead into a crumbly dough. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 175°C. Line a baking tray with parchment paper. Divide the cooled filling into 24 portions and shape them into balls. Roll out the dough on a lightly floured surface to 0.5 cm thickness. Use round cookie cutters to cut out 24 dough circles. Use a fork to press a pattern onto the top of each dough circle.

Beat the egg yolk for the glaze in a bowl. Arrange the dough circles on the baking tray and brush them with the beaten egg yolk. Place a ball of pineapple filling on each dough circle and gently press it into the dough. Bake the tarts in the preheated oven for 20-25 minutes.

Let the baked tarts cool on a wire rack, then arrange them on a serving plate and serve.
