Ingredients
-
5 pieces Tomato, red
-
1 piece Onion, raw
-
100 ml Alcohol, Wine, White
-
500 g Fish, lobster, fresh
-
1 bouquet Parsley, fresh
-
2 pinch Salt, table
-
1 pinch Spices, pepper, black
-
400 g Pasta, spaghetti, whole grain
Steps
-
Discard any open clams immediately, and thoroughly scrub the remaining ones under cold water with a stiff brush to remove the byssal threads or so-called beard. Wash the tomatoes and parsley thoroughly. Cut the tomatoes into pieces and finely chop the parsley. Peel the onion and finely chop it.
-
Place a pot with a larger amount of salted water on the stove. Wait for the water to boil, then add the spaghetti. Cook it for one minute less than indicated on the package.
-
Place a Teflon pan on the stove and heat the oil. Sauté the onion in the oil until it becomes translucent and slightly soft. Then add the tomato, pour in the white wine and clear fish stock, and cook over moderate heat for about 5 minutes.
-
Then add the clams to the pan and cook for about 7 minutes. Discard any clams that did not open during cooking. Drain the cooked spaghetti well and add it to the pan. Add the parsley, season with salt and pepper to taste, and mix everything well. Cook for another 1–2 minutes to heat the dish thoroughly.
-
Serve the spaghetti in warmed plates and present the dish to your guests.

Advice
When cooking pasta, we follow the rule of using 1 liter of water for every 100 grams of pasta. For every liter of water, use 10 to 12 grams of salt. Spaghetti can be replaced with other types of pasta, but long pasta is the most appealing for this dish. The healthiest option is whole grain pasta, which can also be made without eggs, thus containing less fat and more fiber than other pastas. Instead of clams, you can use mussels, shrimp, or chopped crab meat.
