Pistachio and Chocolate Chip Cookies

85 g Butter, unsalted

170 g Sugar, brown

1 piece Egg, fresh

0.5 teaspoons Baking powder

150 g Wheat flour, white, multi-purpose

15 g Cocoa, powdered, unsweetened

80 g chocolate, dark

50 g Pistachio
Steps

Preheat the oven to 190 degrees Celsius. Line two baking trays with parchment paper. In a bowl, sift the flour and mix it with baking powder and cocoa powder.

In a bowl, cream the butter and brown sugar with an electric mixer. Add the egg and mix well. Pour the flour, baking powder, and cocoa mixture into the bowl with the egg mixture, along with half of the chocolate chips and shelled pistachios. Mix everything well with a spatula to form a uniform dough.

Spoon dollops of dough onto the baking trays. Make about 18 dollops. Gently press down the dollops with the back of the spoon and decorate with the remaining chocolate chips and pistachios. Bake the cookies in the preheated oven on the middle rack for about 12 minutes.

Remove the baked cookies from the oven and transfer them to a wire rack. Let them cool.

Arrange the cooled cookies on a serving plate or platter and serve.
