Pistachio and White Chocolate Cookies
You could also call them milk cookies. Why milk, you might wonder? Because one of the ingredients is powdered milk. Together with pistachios and a white chocolate glaze, these cookies are a delightful treat, perfect for festive days.

70 g Pistachio

115 g Butter, unsalted

150 g Sugar, white

1 piece Egg, fresh

1 pinch Salt, table

240 g Wheat flour, white, multi-purpose

30 g Milk, powdered, whole milk

0.5 teaspoons Baking powder

150 g chocolate, dark
Steps

Coarsely chop the pistachios.

Cut the butter into cubes and cream it together with the sugar until smooth. Add the egg and salt. Mix until the ingredients are well combined.

In another bowl, mix the flour, powdered milk, and baking soda. Add half of the dry ingredients to the butter mixture and quickly mix. Add the remaining dry ingredients and mix until combined. Finally, fold in the pistachios.

Transfer the mixture onto a piece of plastic wrap and shape it into a log, about 6 centimeters in diameter. Wrap it like a candy and place it in the refrigerator for at least one hour. If you prefer rounder cookies, reshape the log once the dough has firmed up a bit, then return it to the refrigerator.

Preheat the oven to 175 degrees Celsius. Line a baking sheet with parchment paper.

Unwrap the log and slice it into 1-centimeter thick rounds. Place them on the baking sheet, spacing them about 3 centimeters apart.

Bake the cookies in the preheated oven for 10 minutes. After baking, let them cool on the baking sheet for a few minutes before transferring them to a wire rack.

Melt the white chocolate over a double boiler, then transfer it to a small pot. Dip the cookies halfway into the chocolate and place them back on the wire rack. Let them set until the chocolate hardens. If you're in a hurry, you can place the rack in the refrigerator to speed up the process. Once ready, arrange the cookies on a nice plate or tray and serve.
