Steps

Pit the cherries and cut them into smaller pieces. Add sugar and cook until they dissolve. Mix the starch smoothly in cold water and stir the mixture into the cooked cherries. Stir constantly while cooking until the filling thickens. Cover the prepared filling with plastic wrap and let it cool. Meanwhile, prepare the pistachio cream.

Beat the egg yolks in a mixer. Bring water and sugar to a boil and cook until the syrup reaches 118 degrees Celsius. Slowly pour the syrup into the egg yolks and beat until they become very light and fluffy.

Mix the pistachio paste and mascarpone cheese into the beaten egg yolks. Stir the cream well to ensure there are no lumps. Finally, fold in the whipped cream. Transfer the cream to a piping bag and it can be used immediately.

Cut the Savoiardi biscuits in half, soak them well in milk, and place them at the bottom of the glasses in which you will serve the dessert. Add two tablespoons of the cherry filling over the biscuits, then pipe the pistachio cream on top. If desired, you can also make two layers of biscuits, filling, and cream.

Refrigerate the dessert for at least three hours before serving. Decorate the chilled dessert with chopped pistachios and serve.

Advice
Instead of fresh cherries, you can also use frozen fruit. If desired, you can also use strawberries, cherries, or raspberries and adjust the amount of sugar as needed.
