Pita with Medlars
Medlars are one of the lesser-known fruits. They ripen in October, but we pick them only after the first frost, which softens them.

Ingredients
- 400 g Marmalade, orange

675 g Flour, Wheat, bread flour

1 teaspoon Baking powder

170 g Sugar, white

190 g Butter, unsalted

2 teaspoons Lemon zest, fresh

1 piece Egg, egg yolk, fresh

60 ml Milk, whole milk
Steps

Sift the flour and baking powder into a bowl and add sugar. Mix everything well. Cut the butter into small pieces and add them to the bowl. Quickly rub the butter into the flour with your fingertips to form larger crumbs. Be careful not to let the butter get too warm.

Add the lemon zest, egg yolk, eggs, and milk. Quickly knead the dough into a ball. The dough is quite crumbly. Do not over-knead it. Knead it just enough for the ingredients to stick together. Place the dough ball in a bowl and cover it with plastic wrap. Refrigerate the dough for at least 30 minutes.

Divide the dough into two parts (1/3 and 2/3). Roll out the larger portion of the dough (2/3) on a lightly floured surface to a thickness of 1/2 cm and use it to line the pie dish. Press the dough gently with your fingers into the bottom of the dish, trim the excess, and shape the edges. Prick the dough with a fork in several places. Refrigerate the dish and the remaining dough. Place a small pot of water on the stove and wait for it to boil. Put the medlar jam in a bowl and mash it with a spoon or knife. Add 2 to 3 tablespoons of boiling water and mix well to create a spread for the pie.

Preheat the oven to 200°C. Take the dish and the remaining dough out of the refrigerator. Evenly spread the medlar jam mixture over the dough in the dish. Roll out the remaining dough on a lightly floured surface into long ropes, and use them to create a lattice pattern on top of the pie. Bake the pie in the preheated oven for about 30 minutes, until the dough turns a beautiful golden brown.

Let the baked pie cool completely in the dish, then slice it, serve the pieces on plates, and enjoy.

Advice
Its best to use an organic lemon, as its peel is not treated with pesticides. If organic lemons are not available, submerge the lemon in boiling water for a few minutes and wipe it thoroughly to remove the wax, which contains toxins.
