In a large bowl, mix the flour, salt, sugar, and yeast. Add water and oil, and mix the ingredients with your fingers or a spoon until they come together to form a rough dough. Then, transfer the dough to a work surface and knead it until it becomes smooth, supple, and elastic, and no longer sticks to your hands. If it’s too sticky, add a little more flour.

Grease a bowl with olive oil. Shape the kneaded dough into a ball and place it in the greased bowl. Take a piece of cling film and lightly grease one side with oil. Cover the bowl with the dough using the cling film (greased side down) and let the dough rise in a warm place for 30 minutes (or longer).

While the dough is resting, prepare the tomato sauce. In a bowl, combine the tomato puree, tomato paste, olive oil, basil, and oregano. Season with pepper and salt to taste, and mix well to create a smooth sauce. Let it sit for a while to allow the flavors to develop.

Preheat the oven to 230°C (446°F). Quickly knead the risen dough and divide it into two parts, shaping them into balls. Lightly grease a pizza pan (32 cm in diameter) with oil, and in a bowl, mix the grated mozzarella and Parmesan cheese.

Take one ball of risen dough, dust it with flour, and stretch it into a round shape with your hands. Use your fingers or palms to stretch the dough from the center outward, ensuring it has that characteristic thick edge. Once stretched, place it on the greased pan, spread the sauce over it, and top with cheese and spicy salami. Bake the pizza in the preheated oven for 12 to 15 minutes. Once baked, transfer it to a plate, slice, and serve. Repeat the same process to prepare the second pizza.
