Pizza with Spinach, Onion, and Pine Nuts

Ingredients

First, prepare the dough. In a large bowl, mix the flour with yeast and salt. Make a well in the center and pour in lukewarm water and olive oil. Mix the ingredients with your fingers or a spoon until they come together to form a rough dough. Transfer the dough to a work surface and knead until it becomes smooth, pliable, and firm, and no longer sticks to your hands. Shape the kneaded dough into a ball and cover it with a clean kitchen towel.

Clean and wash the spinach. Peel the onion and cut it in half. Slice both halves into thin strips. Slice the mozzarella. Toast the pine nuts in a dry pan. Shake the pan frequently while toasting to prevent the pine nuts from burning. Transfer the toasted pine nuts to a small bowl.

Pour oil into the pan and add the onion. Cook over medium heat, stirring occasionally, until the onion becomes translucent. Add the spinach and cook until it wilts and all the liquid evaporates.

Preheat the oven to 240 degrees Celsius. Place baking paper on a low baking tray. Quickly knead the dough and roll it out on a lightly floured surface to the size of the tray. Carefully transfer the rolled-out dough to the prepared tray. First, distribute the mozzarella slices over the dough, then add the spinach and onion mixture. Season with pepper and salt, and bake in the preheated oven for 8 to 10 minutes, or until the dough is crispy and golden.

Sprinkle the toasted pine nuts over the baked pizza. Drizzle with a little olive oil, cut into desired-sized pieces, and serve.

Advice
If the dough is too dry, add a little more water; if its too sticky, add a bit more flour. Properly kneaded dough is elastic and doesnt stick to your hands. If you have time, you can let the dough rise.
