Pizza with Zucchini

Ingredients

500 g Dough, puff

2 piece Eggplant, raw

400 g Tomato, red

150 g Cheese, mozzarella

6 twig Spices, oregano, dried

2 pinch Spices, oregano, dried

3 spoons Oil, olive
Steps

Wash the zucchini and slice them into thin strips, then place them on a colander. Salt them well and let them sit for at least half an hour to release water. Then, dry them thoroughly with kitchen towels and quickly fry them in oil. Wash the oregano sprigs and dry them.

Stretch the risen pizza dough to the edges of a greased baking dish and drizzle it with olive oil. Dip the tomatoes in boiling water for a few minutes, then peel them, drain well, and cut them into small pieces. Slice the mozzarella.

Preheat the oven to 220 °C. Evenly distribute the tomato pieces over the dough, leaving about a centimeter of empty edge around the sides. Sprinkle salt and oregano evenly over the tomatoes. Top the pizza with slices of mozzarella and rings of zucchini. Bake the pizza in the preheated oven for 15-20 minutes.

Before serving the pizza, garnish it with fresh oregano sprigs.
