Plum and Vanilla Pudding Pie

150 g Wheat flour, white, multi-purpose

First, prepare the dough. Sift the flour into a bowl and mix it with salt and baking powder. Add cold butter cut into cubes to the mixture. Quickly rub the butter into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Add sugar and an egg, then quickly knead everything into a smooth dough with cold hands. If needed, add a little cold water. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 200°C (392°F). Lightly grease a round pie dish (26 cm in diameter) with butter and dust it with flour (remove any excess flour). Roll out the chilled dough into a 0.5 cm thick circle and place it in the prepared dish. Gently press it against the bottom and sides of the dish with your fingers, then prick it with a fork in several places. Trim any excess dough using a rolling pin. Partially bake the dough in the preheated oven (10 to 15 minutes) until it turns lightly golden brown. Let the partially baked crust cool slightly.

While the dough is baking, prepare the pudding according to the instructions on the package using the pudding powder, sugar, and milk. Let the pudding cool slightly, then mix in the eggs.

Wash the plums, halve them, and remove the pits. Cut each half lengthwise into quarters.

Reduce the oven temperature to 180°C (356°F). Spread the pudding cream over the cooled crust and arrange the plum quarters in circles on top (skin side down). Sprinkle brown sugar over the plums and cream. Bake the pie in the preheated oven for 40 minutes, until the fruit softens and the pudding cream turns golden brown and sets.

Remove the baked pie from the oven and let it cool in the dish placed on a wire rack. Once cooled, slice the pie, serve on plates, and enjoy.
