Plum Cake from a Baking Pan

Steps

First, prepare the shortcrust pastry. In a bowl, sift the flour and mix it with salt. Add the cold butter, cut into cubes, to the mixture. Quickly rub the fat into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Add the egg yolks and sugar, and quickly knead everything into a smooth dough with cold hands. If necessary, add a little cold water. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

Line the baking pan with parchment paper. Take the dough out of the refrigerator and roll it out on a lightly floured surface to the size of the baking pan. Place it in the pan and prick it with a fork in several places.

Wash the plums, dry them, halve them, and remove the pits. Cut the halves lengthwise to get quarters, and use them to cover the dough completely (with the inner side facing up). In a deep bowl, mix the breadcrumbs, ground almonds, and sugar. Sprinkle the mixture over the plums.

Finally, prepare the egg mixture to cover the plums. Separate the egg whites and yolks into two bowls. Beat the yolks with sugar until frothy, and whip the egg whites into stiff peaks. Gently and slowly fold the egg whites into the yolk mixture in two or three additions. Finally, fold in the flour.

Spread the egg mixture evenly over the plums with a spatula. Bake the cake in a preheated oven at 180°C (356°F) for 45 minutes.

Let the baked cake cool to room temperature before cutting. Once cooled, dust with powdered sugar, cut into pieces of desired size, serve on a plate or platter, and enjoy.
