Plum Cake with Coconut
This delicious and juicy fruit cake is perfect with a cup of hot beverage or as a warm dessert served with whipped cream, custard, or a scoop of ice cream. For the cake, firm but ripe plums are best, but you can also use other seasonal fruits (apricots, cherries, raspberries, peaches, nectarines, greengages).

Preheat the oven to 180 degrees Celsius. Grease a deep rectangular or square baking dish (20 cm side) with butter and line it with baking paper. In a bowl, sift the flour and mix it with baking powder and coconut. Clean the plums, wash them, halve them, and remove the pits. If desired, cut the halves in half again to get quarters.

In a bowl, using an electric mixer, cream the softened butter and sugar until smooth. Gradually add the eggs one by one while mixing, until you get a light and fluffy mixture. Then mix in the sour cream, and finally add the mixture of flour, coconut, and baking powder.

Pour the batter into the prepared baking dish. Spread it evenly and arrange the plums on top (cut side facing up).

Bake the cake in the preheated oven for 35 to 40 minutes, or until the top is nicely golden brown.
