Plum Cake with Cottage Cheese and Breadcrumbs
A very juicy and tasty cake that will impress you with its simple preparation. Its advantage is also that it is made from ingredients that we usually always have on hand. Instead of plums, you can also use greengages, cherries, apricots, or peaches, and when fresh fruit is not in season, you can use fruit from compote.

400 g Plum

400 g Cheese, cottage cheese

200 g Semolina

300 ml Milk, whole milk

1 teaspoon Lemon zest, fresh

2 spoons Juice, lemon

3 pieces Egg, fresh

5 spoon Sugar, white

2 handfuls Nuts, almonds, blanched

Steps

Preheat the oven to 180 degrees Celsius. Wash the plums, dry them, and remove the pits by cutting them in half and then removing the pit. Halve them again to get quarters, which you place in a bowl and sprinkle with cinnamon and granulated sugar. Gently mix so that the fruit is evenly seasoned.

Mix the cottage cheese with breadcrumbs, milk, grated lemon zest, and lemon juice.

Crack the eggs and separate the whites and yolks into two bowls. Add the remaining regular sugar and vanilla sugar to the yolks and beat them with an electric mixer into a light, pale yellow cream. Mix the cottage cheese mixture into the beaten yolks.

Add a pinch of salt to the egg whites and beat them with an electric mixer into stiff peaks, which you gently fold into the cottage cheese-yolk mixture in two or three batches using a spatula.

Grease a baking dish (approximately 30 x 20 cm) with butter. First, pour about 2/3 of the mixture into it and spread it evenly over the entire surface with a spatula, smoothing the top. Arrange the plum quarters over the cottage cheese mixture, placing them in neat rows and leaving some empty space between them. Cover the fruit with the remaining cottage cheese mixture, then sprinkle almond flakes on top (you can also omit them).

Bake the cake in the preheated oven for 40-50 minutes (you can increase the temperature to 200 degrees Celsius for the last 10 minutes of baking). It is done when it gets a golden brown crust on top. Before serving, let the cake cool for at least 30 minutes, then sprinkle it with powdered sugar, cut into pieces, and serve.
