Plum Cobbler
Plum Cobbler is a very simple yet delicious dessert that can be served warm or cold. In the off-season when fresh plums are not available, you can use frozen or preserved ones, or substitute them with other fresh fruits (apricots, apples, pears, peaches, cherries, etc.).

Ingredients

300 g Wheat flour, white, multi-purpose

1 teaspoon Baking powder

50 g Nuts, almonds

1 pinch Salt, table

90 g Butter, unsalted

150 g Yogurt, plain, from whole milk

4 spoon Milk, whole milk

1.5 kg Plum

100 g Sugar, white

1 teaspoon Spices, cinnamon, ground

Preheat the oven to 200 degrees Celsius. Grease a small baking dish well with butter. Clean the plums, wash them, halve them, and remove the pits. Wash the orange and dry it thoroughly with a kitchen towel. Finely grate the zest, then cut the fruit in half and squeeze the juice from both halves.

Place the plum halves in the greased baking dish and sprinkle with sugar and ground cinnamon. Gently mix everything together, pour the orange juice over it, and spread it evenly in the dish. Cover with aluminum foil and bake in the preheated oven for 30 minutes. After 20 minutes of baking, remove the foil (be careful not to burn yourself).

While the fruit is baking, prepare the dough. In a bowl, mix the flour, sugar, orange zest, baking powder, salt, and ground almonds. Add the butter cubes and rub the mixture with your fingertips until it resembles coarse crumbs. Heat the yogurt and milk in a small saucepan. Pour the hot mixture into the bowl with the dry ingredients. Stir well with a spoon until a uniform dough forms, which should not be too stiff.

Take the baking dish out of the oven and spoon dollops of the dough over the plums (make about 6 large dollops). Sprinkle the dough and fruit with brown sugar and bake in the oven for another 30 to 35 minutes, until the dough turns a nice golden brown.

Serve the warm cobbler on plates and accompany it with whipped cream, Greek yogurt, custard, or a scoop of ice cream.
