Plum Dumplings from Potato Dough
Dumplings made from potato dough, filled with plums or other fruit, can be served as a dessert or as a standalone meal (dinner).

Ingredients

100 g Butter, unsalted

70 g Breadcrumbs, dried

750 g Potatoes, white

225 g Wheat flour, white, multi-purpose

Steps

Thoroughly wash the potatoes and scrub them if necessary. Place them in a large pot and cover with enough cold salted water to fully submerge them. Cook them in their skins for 25 to 30 minutes until tender. Use a sharp, narrow knife to check if the potatoes are cooked.

Wash the plums and remove the pits. Be careful not to fully separate the halves. Insert a sugar cube into each plum and close them.

Drain the cooked potatoes immediately, wait a few minutes for them to cool slightly, then peel them while still hot. Peel the potatoes and finely grate them. Wait 1 minute for the steam to dissipate, then add flour, salt, and eggs. Knead everything together with your hands into a dough, which should be used immediately as it becomes wet and difficult to shape if left standing.

Roll out the dough on a floured surface to a thickness of 0.5 cm. Cut it into 7 x 7 cm squares using a pastry wheel. Place a plum in the center of each square. Fold the dough over the fruit and shape the dumplings with your hands. Press the edges firmly to ensure the dumplings don't fall apart during cooking.

Place a large pot of salted water on the stove and wait for it to boil. Carefully place the dumplings into the boiling water. Cook them for 10 to 15 minutes or until they float to the surface. Remove the cooked dumplings with a slotted spoon and drain them well.

Melt butter in a pan and lightly brown the breadcrumbs while stirring. Add the cooked dumplings and turn them to coat them evenly with the breadcrumbs.

Mix sugar and cinnamon in a bowl. Serve the dumplings on plates, sprinkle with the spiced sugar, and enjoy.

Advice
It is best to choose small and similarly sized potatoes, as they will cook quickly and evenly. If you dont have sugar cubes, you can also use regular or brown sugar, which you can spoon into the pitted plums.
