Plum Galette
The dough is very buttery and so flaky that it will melt in your mouth. If you dont have plums on hand, you can also prepare the galette with some other seasonal fruit (such as blueberries, persimmons, etc.), but dont forget a scoop of vanilla ice cream, which will perfectly complement this simple dessert of divine taste.

Steps

First, prepare the dough. Sift the flour into a bowl and mix it with salt. Add the cold butter, cut into cubes, to the mixture. Quickly work the fat into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Then add enough cold water to bind the ingredients together and form a uniform dough. Flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Preheat the oven to 200°C. Wash, dry, and pit the plums. Cut them into thick slices. In a small bowl, mix the ground almonds, flour, and 50 g of sugar.

Roll out the cold dough on a lightly floured surface into a larger circle (35 to 40 cm in diameter). Using a rolling pin, transfer it to a low baking dish lined with parchment paper. Sprinkle the mixture of flour, sugar, and ground almonds over the dough, leaving about 3 cm of the edge empty. Arrange the plum slices over the mixture. Dot them with pieces of butter and sprinkle with the remaining sugar. Fold the uncoated edge of the dough towards the center of the circle, partially covering the filling.

Bake the galette in the preheated oven on the middle rack for 50 to 60 minutes. It is done when the plums are completely soft and the dough is golden brown. Let it rest for 10 minutes before serving to make it easier to cut into slices.
