Plum Jam
An intoxicatingly fragrant and versatile jam made from fresh plums and sugar, enriched with a pinch of ground cinnamon and a dash of rum.

Ingredients

3 kg Plum

1 kg Sugar, white

0.5 dl Alcohol, Rum

Sort the plums, wash them, dry them, and remove the pits.

Place the pitted plums in a large pot with a thick bottom and mix them with sugar. Place on the stove and cook over medium heat for about 1 hour, or until the plums are completely softened and broken down, stirring occasionally.

While the plums are cooking, thoroughly wash the jars and lids for preserving and place them in an oven preheated to 50 degrees Celsius.

Remove the pot from the heat and blend the plums with an immersion blender. If you don't want any fruit chunks in the jam, blend until you get a completely smooth mixture. Add lemon juice, cinnamon, and rum, and cook everything together over low heat for another half hour, stirring constantly. Check the thickness by placing a small amount of jam on a well-cooled plate, waiting a bit, and then pushing it with your finger. If it wrinkles, it's ready. If it doesn't, cook the jam for a few more minutes.

Fill the warm jars with the hot jam up to the rim. Seal them tightly, cover with a thick blanket, and let the jam cool slowly.
