Plum Muffins

Ingredients

275 g Wheat flour, white, multi-purpose

1.5 teaspoons Baking powder

2 piece Egg, fresh

100 g Sugar, white

100 ml Oil, vegetable oil, canola

250 ml Yogurt, plain, from whole milk

350 g Plum
Steps

Set the oven rack to the middle position and preheat the oven to 180 degrees Celsius. Place paper liners in the muffin tin (or grease the tin well with butter).

In a bowl, mix the dry ingredients: flour, baking powder, and baking soda. Make a well in the center. Wash the plums, halve them, and remove the pits. Cut the halves into smaller pieces.

In a bowl, lightly whisk the eggs with a hand whisk. Add yogurt, sugar, and oil. Mix everything well and pour into the well made in the bowl with the dry ingredients. Quickly mix with a spatula or spoon to ensure all ingredients are moistened and combined. Then add the plum pieces and quickly and gently mix everything together. The batter should not be completely smooth but still a bit lumpy.

Fill the muffin tin cavities three-quarters full with the batter. Bake in the preheated oven for about 20 minutes or until the tops are golden brown.

Let the baked muffins cool in the tin for 5 minutes, then remove them from the tin and cool on a wire rack. Serve warm or cold.

Advice
Instead of oil, you can use melted butter or coconut oil. The ingredients are enough to make 6 large muffins or 8 to 10 regular-sized muffins.
