Plum Pastry with Almond Butter Crumbs

Steps

Preheat the oven to 180 degrees Celsius. Cut the butter into small cubes and store them in the refrigerator until use. Grease a deep rectangular baking dish (20 x 30 cm) with butter and line it with baking paper. In a bowl, mix ground almonds and sugar. Sprinkle the butter cubes over the mixture. Use your fingertips to rub the butter into the dry ingredients.

Transfer half of the mixture to another bowl and add 140 g of flour. Use your hands to knead everything together until you get a crumbly butter dough. Spread the dough in the prepared baking dish and press it firmly against the bottom with your palm. Use your fingers to pull the dough up to create an edge. Bake in the preheated oven for 15 to 20 minutes, until the dough turns golden brown.

Remove the baked dough from the oven and let it cool for 10 minutes. Meanwhile, wash and pit the plums. Cut them into quarters. In the bowl with the remaining half of the butter, sugar, and ground almond mixture (save a few tablespoons for sprinkling), add eggs, 25 g of flour, cinnamon, and baking powder. Mix everything well with an electric mixer until smooth, then spread it over the dough in the baking dish. Arrange the plum quarters on top and sprinkle with a little sugar and cinnamon. Place the baking dish in the preheated oven for 20 minutes.

Add 50 g of flour to the reserved mixture of butter, sugar, and almonds. Use your fingertips to mix all the ingredients into butter crumbs. After 20 minutes of baking, remove the baking dish from the oven and sprinkle the butter crumbs and almond sticks over the plums. Bake the pastry in the preheated oven for another 15 to 20 minutes, or until the butter crumbs turn a nice golden brown.

Let the baked pastry cool in the baking dish, then cut it into pieces of any size, serve on a plate or platter, and enjoy.

Advice
Instead of almond sticks, you can use almond flakes. Plums can be replaced with apricots or peaches. If you dont have enough ground almonds, replace the missing amount with flour.
