Poached Apricots with Ice Cream
The syrup in which we poach the apricots is made from sweet white wine, honey, and a vanilla pod. For the finishing touch, add a scoop of good ice cream or a bit of creamy yogurt.

10 pieces Apricot, raw

240 ml Alcohol, Dessert wine

120 ml Water

0.5 pod Vanilla, extract, natural

20 ml Juice, lemon

80 g Honey

250 ml Ice cream, vanilla
Steps

Wash the apricots, cut them in half, and remove the pits. Prepare a larger pot, add lemon juice, honey, wine, and water. Cut the vanilla pod in half with a sharp knife and scrape out the seeds with the tip of the knife, then add both the seeds and the pod to the pot.

Place the pot on the stove and bring the mixture to a boil. Stir until the honey and vanilla seeds are well distributed. Once it boils, add the apricots to the pot, reduce the heat, and simmer gently until the apricots soften (about 5 to 10 minutes).

Remove the apricots from the pot and place them on a plate. Increase the heat to bring the liquid to a boil. Simmer vigorously until about half of the liquid has reduced and turned into a syrup.

Remove the pot from the heat and add the apricots back in. Allow the syrup and apricots to cool.

Serve the apricots in bowls and pour the syrup over them. Add a scoop of vanilla ice cream and serve the prepared dessert.

Advice
