Poached Pears
Poached pears are an excellent accompaniment to roasted meat. Their unique flavor particularly complements roasted pork or beef. If stored in beautiful jars, they can also be gifted during holidays when we often run out of ideas for presents for friends and acquaintances.

Ingredients

pieces Lemon zest, fresh

5 pieces Spices, cloves, ground

0.5 teaspoons Spices, pepper, black

0.5 teaspoons Spices, pepper, red or cayenne

pieces Ginger, fresh

400 g Sugar, white

500 ml Vinegar, apple

1 kg Pear, fresh
Steps

Place a large pot on the stove and add lemon zest, cloves, sliced ginger, peppercorns, allspice berries, apple cider vinegar, and sugar. Heat the ingredients in the pot over medium heat, stirring occasionally, until all the sugar has dissolved.

Meanwhile, wash the pears, peel them, and cut them in half lengthwise. Remove the stems and cores, then add the halves to the pot. Simmer the pears in the liquid for about 15 minutes until they soften.

Use a slotted spoon to remove the pear halves from the pot and place them on a plate. Increase the heat and wait for the liquid in the pot to boil. Continue cooking the liquid for another 10 minutes or until about 1/3 of the liquid has reduced.

Place the pear halves into hot canning jars. Pour the liquid over them, then tightly seal the jars and let them cool.

Once cooled, store the jars in a dark and cool place, where they should rest for at least one month before use.

Advice
Instead of apple cider vinegar, you can use white wine vinegar or white wine. If desired, you can replace part of the vinegar with water.
