Pokrovačine Polpetke

Ingredients

550 g Fish, cockle

150 g Mayonnaise

3 pieces Egg, egg yolk, fresh

3 pieces Onion, young

1 handful Coriander, leaves, fresh

1.5 spoons Mustard

1.5 spoons Spices, curry powder

0.75 teaspoons Salt, table

0.5 teaspoons Spices, pepper, black

300 g Breadcrumbs, dried

1 dl Oil, plant, sunflower
Steps

Rinse the pokrovač meat under running water and dry it well with a paper towel. Cut it into small pieces and place them in a bowl. Rinse the coriander, shake it off, and chop it finely. Rinse the young onions, clean them, and chop them finely. Add all the ingredients except the breadcrumbs to the bowl with the pokrovač meat and mix well. Finally, add 250 g of breadcrumbs and mix well again. Place the mixture in the refrigerator for 1 hour.

Take the chilled mixture out of the refrigerator and shape it into balls of any size using your hands. Gently flatten each ball between your palms and roll it in the remaining breadcrumbs.

Heat the oil well in a pan and fry the prepared polpetke on both sides. When they are golden brown on both sides, transfer them to paper towels to drain the excess fat.

Serve the pokrovačine polpetke on plates and offer them with a chosen side or dip.

Advice
The baked polpetke can also be prepared 4 hours before serving, but they must be placed in the refrigerator after baking, then reheated in the oven at 150 °C for 8 minutes.
