Polenta Pizza with Tomatoes, Mozzarella, and Anchovies
Pizza is one of those dishes that we cant go wrong with. Even if we use cooked polenta as the base instead of leavened dough, which we first bake in the oven and then top with any desired ingredients.

Ingredients

3 pieces Tomato, red

400 g Cheese, mozzarella

6 pieces Fish, anchovy fillets in oil

4 pieces Olives, black, in brine

0.25 teaspoons Rosemary, fresh

Polenta

1 cup Milk, whole milk

1.5 cups Water

1 cup Polenta

1 spoon Oil, olive

0.75 teaspoons Salt, table
Steps

Place a larger pot with milk, water, and salt on the stove. Wait for the liquid to boil. Once it boils, reduce the heat to medium and slowly pour in the polenta. Stir continuously with a hand whisk to prevent lumps from forming. Once all the polenta is mixed in, reduce the heat to the lowest setting and cook for another 5 to 10 minutes until it thickens. Stir well several times during cooking. If it becomes too thick, add a little more water. Once the polenta is ready, mix in one tablespoon of olive oil.

Grease a round pizza pan or a round cake pan with a removable rim well with oil. Transfer the prepared polenta into the pan and spread it evenly with a spoon or spatula. The layer of polenta should be about 1.5 to 2 cm thick. Cover the pan with plastic wrap and refrigerate for about 1 hour to allow the polenta to set.

Preheat the oven to 220 degrees Celsius. Place the pan with the polenta in the preheated oven for about 15 minutes until the top of the polenta turns golden brown.

While the polenta is baking, prepare the other ingredients. Clean and wash the tomatoes. Slice them into thin rounds. Drain the mozzarella well and also slice it into thin rounds.

Top the baked polenta base with slices of tomato and mozzarella. Add anchovies, black olives, and rosemary. Bake the polenta pizza in the preheated oven for another 10 to 15 minutes. Serve warm or cold.

Advice
