Steps

In a pot, bring 1.5 liters of water to a boil. Salt the water and enrich it with a little olive oil. Slowly and gradually stir in the cornmeal. While continuously stirring, cook the polenta for about 5 minutes. Once the polenta boils, reduce the temperature and cook the polenta on low heat for another 20 minutes. Stir the polenta well several times during cooking.

Grease a larger baking dish with oil. Wash and dry the basil sprigs. Tear the leaves from the sprigs and chop them. Once the polenta is cooked, remove the pot from the heat and mix in the remaining olive oil, half of the grated Parmesan, and the chopped basil. Transfer the prepared polenta to the greased baking dish and spread it evenly. Cover the dish with food wrap and refrigerate for one hour to cool and set the polenta.

Preheat the oven to 220 degrees Celsius. Place the baking dish with the polenta in the preheated oven for about 20 minutes to allow the top to turn golden brown. Meanwhile, wash and clean the tomatoes. Slice them into thin pieces.

After 20 minutes, remove the baking dish from the oven and sprinkle the remaining Parmesan over the polenta, then arrange the tomato slices on top. Return the dish to the preheated oven for another 10 minutes.

Remove the baking dish from the oven and let the polenta cool. Once cooled, cut the polenta into squares, serve them on a larger plate or platter, and enjoy. Optionally, garnish the squares with fresh basil leaves.
