Polenta Vegetable Pizza
Why not use cooked polenta instead of yeast dough to prepare pizza? The toppings on the pizza depend on your taste and desires. We decided on a vegetable pizza!

Ingredients

0.5 cups Milk, whole milk

1.5 cups Water

1 cup Polenta

2 spoons Oil, olive

0.75 teaspoons Salt, table

2 pinch Spices, pepper, black

4 spoon Tomato sauce, without salt

300 g Cheese, mozzarella

6 pieces Mushrooms, mushrooms, fresh

1 handful Olives, black, in brine

Steps

Place a larger pot with milk, water, and salt on the stove. Wait for the liquid to boil. Once it boils, reduce the heat to medium and slowly pour in the polenta. Stir continuously with a hand whisk to prevent lumps from forming. Once all the polenta is mixed in, reduce the heat to the lowest setting and cook for another 5 to 10 minutes until it thickens. Stir well several times during cooking. If it becomes too thick, add a little more water. Once the polenta is ready, stir in one tablespoon of oil.

Grease a round pizza pan or a round pan with a removable rim well with oil. Transfer the polenta into the prepared pan and spread it evenly with a spoon or spatula. The thickness of the polenta layer should be between 1 to 1.5 cm. Season the polenta with salt and ground pepper as desired. Cover the pan with plastic wrap and refrigerate for about 1 hour to allow the polenta to set.

Preheat the oven to 220 degrees Celsius. Place the pan with the polenta in the preheated oven for about 20 minutes until the top turns golden brown. Meanwhile, prepare the other ingredients. Clean the mushrooms and rinse them quickly under running water if necessary. Slice them thinly. Clean, wash, and dry the arugula. Drain the olives and cut them into rings of desired thickness.

Remove the pan from the oven and spread the polenta with tomato sauce, then top with pieces of mozzarella. Finally, add the mushrooms. Place the pan back in the preheated oven for about 10 minutes.

Top the prepared polenta pizza with arugula and black olives, then cut into pieces of desired size. Serve on plates and offer warm or cold.
