Steps

Cut the butter into pieces and finely grate the zest of one lemon. Sift the flour together with the baking powder into a large bowl and sprinkle the butter pieces on top. Add sugar, lemon zest, vanilla sugar, ground hazelnuts, egg, and egg yolk.

Quickly knead all the ingredients by hand into a crumbly dough, shape it into a ball, wrap it in foil, and place it in the refrigerator for one hour. Meanwhile, use a sharp knife to cut off the flower bud of the pomegranates. Place the fruits upright (with the cut part facing upwards), then make even cuts through the skin downwards. Fold the skin pieces back and push the seeds into a bowl with your fingers, removing all the bitter membranes.

Preheat the oven to 180 degrees Celsius and line a baking tray with parchment paper. On a floured work surface, roll out the dough to 0.5 cm thickness and cut out cookies of various shapes using cookie cutters. Sprinkle the cookies with pomegranate seeds and carefully place them on the baking tray.

Place the baking tray in the oven and bake the cookies for exactly 15 minutes until they turn golden brown. Remove the tray from the oven and let the cookies cool. Then arrange them on a serving plate and offer them to your guests.

Advice
You can gently press the pomegranate seeds into the dough with your fingers. Its best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, soak the lemon in hot water for a few minutes and wipe it well to remove the wax, which contains toxins.
