Ingredients
-
pieces Butter, unsalted
-
3 spoons Oil, vegetable oil, canola
-
200 g Corn, yellow, fresh
-
175 g Butter, unsalted
-
150 g Sugar, white
-
0.25 teaspoons Salt, table
-
150 g Syrup, maple
-
150 g Nuts, pecan
Steps
-
Coarsely chop the pecans. Lightly grease two low baking sheets with butter.
-
Pour oil into a large deep pan (pot). When it heats up, add the corn kernels and cover the pan. Wait a few minutes and when you hear popping, shake the pan well several times to ensure all the kernels pop. When the kernels stop popping, remove the pan from the heat and transfer the popcorn to a large bowl.
-
Wipe the pan well with a kitchen towel, then add butter, sugar, salt, and maple syrup. Heat slowly over moderate heat until the sugar and butter melt and form a smooth mixture. When the mixture boils, stop stirring. Cook at a strong boil for another 4 to 5 minutes until a thick, dark brown caramel mixture forms. To check if the mixture is thick enough, drop a small amount into cold water; if it immediately forms a ball, it is ready.
-
Add the hot caramel mixture along with the chopped pecans to the bowl with the popcorn. Mix well with a spoon, then transfer the mixture to the prepared baking sheets. Using a spoon or spatula, evenly spread the popcorn over both baking sheets and let it cool. Once cooled and hardened, break it into small pieces. Serve the prepared popcorn.
