Ingredients
-
pieces Butter, unsalted
-
200 g Wheat flour, white, multi-purpose
-
2.5 teaspoons Baking powder
-
2 spoons Spices, poppy
-
1 teaspoon Lemon zest, fresh
-
2 piece Egg, fresh
-
100 g Butter, unsalted
-
80 g Sugar, white
-
100 ml Milk, whole milk
-
12 pieces Cherries, fresh
Steps
-
Preheat the oven to 180 degrees Celsius. Grease the muffin tin wells well with butter (or place paper liners in them). In a small pot, melt the butter over low heat, then let it cool slightly. In a bowl, mix the flour, baking powder, poppy seeds, and lemon zest.
-
In another bowl, whisk together the eggs, milk, sugar, and melted butter with a hand whisk. Add the dry ingredient mixture to the egg mixture and stir with a spatula just enough to moisten and combine all the ingredients.
-
Fill the muffin tin wells with the prepared batter up to 2/3 full. Press a cherry into the center of each muffin. Bake the muffins in the preheated oven on the middle rack for 20 to 25 minutes, or until they turn golden brown. To check if the muffins are done, insert a toothpick into a muffin - if it comes out clean, the muffin is baked.
-
Remove the baked muffins from the oven and let them rest for about 5 minutes. Then remove them from the tin and let them cool.

Advice
It is best to use organic citrus fruits, whose peel is not treated with pesticides. If organic citrus fruits are not available, immerse the fruits in boiling water for a few minutes, then wipe them well to remove the wax, which contains toxins.
