Poppy Seed Cake with Apples and Chocolate Glaze
Do you know the old tradition or superstition that says children should eat poppy seeds on their first day of school? It is believed that poppy seeds will ensure they stay smart and learn more easily throughout the year. Surprise them with a quick and very juicy poppy seed cake with apples and chocolate, which doesn’t require unusual ingredients or a scale, as a yogurt cup is used for measuring. The only downside of this excellent cake is that you definitely won’t stop at just one slice.

Ingredients

150 g chocolate, dark

100 g Butter, unsalted

Steps

Wash the apples and peel them if desired. Cut them into pieces or grate them. Sift the flour into a bowl and mix it with sifted baking powder.

Beat the eggs until frothy with regular and vanilla sugar. Gradually add the remaining ingredients while mixing, except for the apples. Add the apples at the very end and mix them into the batter using a spatula or hand whisk.

Preheat the oven to 200 degrees Celsius. Grease a smaller rectangular baking pan (30 x 23 cm) with butter and lightly dust it with flour (remove any excess flour). Pour the batter into the pan and spread it evenly with a spatula, smoothing the top. Bake the cake in the preheated oven for 30 to 40 minutes. It is done when the top turns golden brown and a toothpick inserted into the cake comes out clean.

Remove the pan from the oven and let the baked cake cool. Meanwhile, melt the butter and chocolate in a double boiler or microwave. Gently mix the melted ingredients to obtain a smooth chocolate mixture, which is then poured over the baked cake. Place the prepared cake in a cool spot and wait for the chocolate to set. Finally, cut it into slices, serve on a plate or platter, and enjoy.

Advice
The volume of the yogurt cup is 2 dl. Optionally, mix in a tablespoon or two of rum into the batter. Before pouring the chocolate glaze over the cake, you can also spread it with apricot jam.
