Poppy Seed Cake with Lemon Glaze
Poppy seed cake is definitely not a light dessert. With the addition of refreshing lemon glaze, we slightly freshen it up, but it is still far from a treat you would indulge in every day.

Ingredients

Preheat the oven to 175 degrees Celsius, and set the oven rack to the middle position. Grease a small rectangular baking pan (23 x 13 cm) well with butter (or line it with baking paper). Sift the flour and baking powder into a bowl. Add salt and mix the dry ingredients well.

In a bowl with a hand whisk (or mixer), mix melted butter, sour cream, poppy seeds, lemon juice, and lemon zest.

In a bowl with an electric mixer, beat the eggs and sugar for 4 to 6 minutes on medium speed until light and fluffy. Reduce the speed and slowly mix in the dry ingredients. Mix just enough to combine. Then add about 1/4 of the mixture to the bowl with the poppy seeds. Mix well, then add the remaining egg, sugar, and dry ingredient mixture. Mix thoroughly to form a smooth batter without lumps.

Pour the batter into the prepared baking pan. Spread it evenly and smooth the top. Bake in the preheated oven for 40 to 60 minutes (baking time depends on the oven and the size of the pan). The cake is done when the top is nicely browned, and a toothpick inserted into the cake comes out clean.

Once the cake is baked, remove it from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Finally, prepare the lemon glaze. Sift powdered sugar into a small bowl and mix it smoothly with lemon juice. While the cake is still warm, spread or pour the lemon glaze over it. Let the cake cool completely, allowing the glaze to set.
