Poppy Seed Pastry with Hokkaido Pumpkin
Isnt this pastry a wonderful sight? The orange-yellow cream is a perfect contrast to the black poppy seeds, and the combination will delight you not only with its appearance but also with its taste. To make the preparation and baking of the pastry even quicker, I suggest preparing the pumpkin puree a day in advance. Simply cut the pumpkin into slices and bake it for about an hour at 180 degrees Celsius. Remove the skin and blend the baked flesh into a smooth puree.

300 g Pumpkin, raw

500 g Cheese, cottage cheese

200 ml Sour cream

1 spoon Semolina

Steps

Preheat the oven to 175 degrees Celsius. Grease a rectangular baking pan (35 x 24 cm) with butter.

Beat the eggs until frothy with regular and vanilla sugar. Add oil, mix well, then add the poppy seeds and mix them into the batter. Finally, add the flour mixed with baking powder and milk, and mix the batter thoroughly one last time.

Pour half of the poppy seed mixture into the baking pan and bake in the preheated oven for 10 minutes (the cake will not be fully baked yet!). While the cake is baking, prepare the filling.

Mix the cottage cheese, sour cream, regular and vanilla sugar together. Add the pumpkin puree and mix well again.

Sprinkle the half-baked cake with breadcrumbs and spread the filling over it. Carefully distribute the remaining cake batter over the filling and bake the pastry in the preheated oven for another 30-35 minutes.

Let the baked pastry cool completely, and before serving, sprinkle it with ground poppy seeds on top.
