Poppy Seed Roll
A true recipe for lovers of poppy seeds and sweet yeast treats. The poppy seed roll is also a wonderful dessert that can brighten up your holiday table. This pastry tastes best when still warm, paired with a cup of tea or warm milk. The only downside is that its so delicious, you just cant stop eating it.

Ingredients
Dough

2 dl Milk, whole milk

80 g Butter, unsalted

2 piece Egg, fresh

1 piece Egg, egg yolk, fresh

130 g Sugar, white

2 bags Sugar, white

50 g Oil, vegetable oil, canola

600 g Wheat flour, white, multi-purpose

1 bag Yeast, dry

1 pinch Salt, table
Filling

2.5 dl Milk, whole milk

100 g Sugar, white

1 bag Sugar, white

400 g Spices, poppy

2 piece Egg, egg white, fresh

pieces Powdered sugar

Steps

Melt the butter in warm milk. Add eggs, egg yolk, regular and vanilla sugar, and oil. Mix well.

Combine everything with the sifted flour, to which you’ve added yeast and a pinch of salt. Knead into a soft and smooth dough. If needed, add a bit more flour. Shape the dough into a ball and let it rest in a warm place until it doubles in size.

Prepare the filling. Bring milk, to which you’ve added regular and vanilla sugar, to a boil. Add the poppy seeds and mix. Let it cool until lukewarm. Beat the egg whites into stiff peaks and gently fold them into the poppy seed mixture.

Roll out the risen dough on a floured surface to a few millimeters thick and spread the poppy seed filling over it. Roll it up like a strudel, then bring both ends of the roll together to form a ring.

Using a sharp knife, make cuts about 2 centimeters wide on the outer side of the ring (the dough should still hold together on the inner side). Cover with a clean cloth and let it rest for another 10 minutes.

Preheat the oven to 170 degrees Celsius. Brush the poppy seed roll with egg yolk mixed with a tablespoon of milk.

Bake the poppy seed roll in the preheated oven for about 45 minutes. Before serving, dust the top with powdered sugar.
