8 pieces Tortilla, wheat

2 piece Avocado, fresh

200 g Cheese, edamame

1 can Corn, yellow, in brine

1 can Beans, baked, can
Tomato sauce

2 piece Tomato, red

1 piece Onion, raw

2 pod Garlic, fresh

1 spoon Oil, plant, sunflower

0.5 dl Soup base, chicken, cube

0.5 teaspoons Spices, thyme, dried

0.5 teaspoons Salt, table
Steps

Prepare a fresh tomato sauce from the ingredients.

Peel the onion and garlic, and finely chop them. Peel the carrot, wash it, and slice it into rings. Place the pork meat in a larger pot and add the garlic, onion, carrot, cumin, salt, and coriander. Pour in enough water to cover all the ingredients and place the pot on the stove. Wait for the contents to boil, then reduce the heat, cover the pot, and cook for 2 hours. Add more water if needed. After cooking, remove the meat from the water, strain the liquid, and save 1 dl of it.

Place a larger pan on the stove and sear the meat on all sides until nicely browned. Remove the meat from the pan, cut it into fillets, and shred it with a fork. Return the shredded meat to the pan, pour in the saved liquid, and cook for another 5 minutes. On another pan, toast the tortillas on both sides, and when they puff up, fold them onto a plate.

Drain the beans and corn well. Grate the cheese, peel the avocado, and cut it into cubes. Place a spoonful of beans and a spoonful of corn on the lower part of the tortilla, then cover with the meat, pour over the tomato sauce, and sprinkle with avocado cubes and cheese. Leave about 2 cm of empty space on the left side.

Roll the tortillas into burritos. Fold the left edge of the tortilla over the filling, then roll the tortilla from the bottom upwards into a roll. If desired, cut the burritos in half and arrange them on plates.
