Pork Chops in Bacon and Mushroom Sauce
When you want to prepare chops in mushroom sauce but dont have fresh mushrooms on hand, use dried ones. They will add an excellent aroma, as they are a true concentrate of flavor.

Ingredients

2 spoons Oil, vegetable oil, canola

1 kg Meat, pork, curry without bones

pieces Salt, table

150 g Meat, pork, smoked bacon

1 piece Onion, raw

20 g Mushrooms, shiitake, dried

1.5 spoons Wheat flour, white, multi-purpose

1 spoon Tomato, concentrate

1.5 dl Alcohol, Wine, White

pieces Soup base, beef, cube
Steps

Place the dried mushrooms in a bowl and pour hot water over them. There should be just enough liquid to completely cover the mushrooms. Let them soak while you prepare the other ingredients.

Dry the pork chops well with paper towels and season them with salt and pepper. Peel and finely chop the onion, and cut the bacon into pieces.

Heat a larger pan and grease it with oil. Quickly sear the seasoned chops on both sides in the hot oil. Remove them from the pan and set aside on a plate.

Add the bacon to the pan and fry it. Add the onion and sauté until translucent, then mix in the soaked mushrooms, which have been well drained (do not discard the liquid). Sprinkle the ingredients with flour and fry them while stirring constantly for 1-2 minutes.

Add the zest and pour in the wine, the liquid from the soaked mushrooms, and the broth. Once the sauce comes to a boil, add the seared chops and simmer them covered over low heat until tender. Serve the chops in the sauce with boiled rice or another side dish.
