Ingredients
-
2 spoons Oil, vegetable oil, canola
-
4 pieces Meat, pork, curry without bones
-
0.5 dl Alcohol, Wine, White
-
1 spoon Mustard
-
230 ml Sweet cream
-
0.5 teaspoons Salt, table
-
2 pinch Spices, pepper, black
Steps
-
Lightly season the pork chops with salt and pepper on both sides. Heat oil in a pan and sear the chops. Cook for about 2 minutes on each side.
-
Transfer the seared chops to a plate and cover to keep them warm. Pour wine into the pan and use a spatula to scrape the bottom well, removing all the caramelized bits that formed while cooking the meat. Let about 1/3 of the wine simmer.
-
After about 2 minutes, add mustard and cream. Stir well with a spatula to create a smooth sauce. Place the chops back into the sauce (including any juices that collected on the plate) and let everything simmer on low heat for another 10 to 15 minutes. Season the sauce with additional pepper and salt if desired.
-
Serve the chops on plates and pour the prepared sauce over them. Pair the dish with your chosen side.

Advice
Instead of chops, you can use medallions. Wine can be replaced with water if desired.
