Pork Chops in Crispy Parmesan Crust
Delicious fried pork chops that are very juicy and tender due to the crispy coating. The trick to ensure extra juiciness is to soak the meat in milk for a few minutes before breading. For additional flavor and aroma, you can also add a bit of grated lemon zest to the breadcrumb and Parmesan mixture.

500 g Meat, pork, curry without bones

150 ml Milk, whole milk

2 piece Egg, fresh

1 pinch Salt, table

200 g Breadcrumbs, dried

100 g Cheese, Parmesan, hard

pieces Oil, vegetable oil, canola

Place the pork chops in a shallow dish and pour milk over them. Let them soak for at least 15 to 20 minutes, with 30 minutes being the most optimal.

Finely grate the Parmesan and mix it with the breadcrumbs.

Season the eggs with a pinch of salt and beat them well with a fork.

Remove the chops from the milk and drain them. First, dip them in the beaten eggs, then coat them in the breadcrumb and Parmesan mixture. Press the breading gently with your hand to ensure the chops are well coated on all sides.

Place a deep frying pan on the stove and heat the oil well. The oil is ready when small bubbles form around a wooden spoon handle dipped into it. Place the breaded chops in the hot oil and fry them until golden brown on both sides (about 3 minutes per side).

Remove the fried chops from the pan and place them on a plate lined with paper towels. Wait for the excess fat to drain off, then serve them warm with your chosen side dish.
