Pork Chops in Mushroom Sauce

Ingredients

40 g Mushrooms, shiitake, dried

300 g Mushrooms, mushrooms, fresh

300 ml Milk, whole milk

Peel the onion and slice it thinly or chop it finely. Clean the mushrooms with a damp cloth and slice them. Rinse the pork chops and dry them with paper towels. Lightly season them with pepper and salt, and coat one side with flour.

Heat half of the oil in a pan and fry the pork chops. Place them in the pan with the floured side down first, cook for 3 to 4 minutes, then flip and brown the other side until golden.

Remove the fried pork chops from the pan and keep them warm on a plate. Pour the remaining oil into the pan and quickly sauté the onion. Add the soaked mushrooms and sliced mushrooms to the pan. Stir-fry for 2 to 3 minutes, then pour in the milk. Use a spatula to scrape the bottom of the pan to release any bits that formed during frying. Season the sauce to taste with pepper and salt, and if desired, add a bit of the liquid used to soak the mushrooms for extra flavor. Add the fried pork chops back to the sauce, cover the pan, and let the meat simmer on low heat for 15 minutes. If the sauce is too thick, add a bit more milk.
