Rinse the pork chops under running water and thoroughly dry them with paper towels. In a small bowl, mix together rosemary, salt, pepper, and garlic. Rub the prepared mixture all over the chops, place them in a bowl, cover, and marinate in the refrigerator for at least 2 hours. Take the marinated meat out of the refrigerator about 30 minutes before cooking and let it sit at room temperature to warm up.

Heat oil in a pan. Remove the garlic slices from the marinated chops (they would burn during cooking), then place the chops in the hot oil. Cook them for 3 to 4 minutes on each side. Place the cooked chops on a warm plate, loosely cover with aluminum foil, and let them rest while you prepare the sauce.

In a small saucepan, melt one tablespoon of butter, in which you sauté the chopped shallot. Add the cherries, wine, and meat juices (from the pan and the plate where the chops were resting). Cook for 5 to 6 minutes, stirring occasionally, until half of the wine has evaporated and the sauce thickens slightly. Gradually stir in the remaining butter. Season with salt and pepper to taste.

Serve the cooked pork chops on plates. Optionally, pour the prepared sauce over them or serve the sauce alongside the cooked meat. Offer it together with a side dish of your choice.
