Ingredients

2 spoons Strawberries

4 spoon Alcohol, Gin

1 pod Garlic, fresh

1 twig Rosemary, fresh

1 teaspoon Spices, coriander - seeds

3 spoons Oil, olive

150 ml Juice, apple

2 pinch Salt, table

1 pinch Spices, pepper, black

Crush the juniper berries in a mortar. Pour the gin into a small cup and heat it slightly over moderate heat. Place the crushed berries in a bowl and pour the warmed gin over them. Let it sit for 20 minutes. Then strain the berries through a sieve and save the gin for later.

Wash the rosemary sprig, shake it dry, and strip the leaves. Peel the garlic and crush it with a knife. Place it in a multipurpose grinder along with the rosemary, juniper berries, two tablespoons of olive oil, and coriander seeds. Grind everything well and spread the mixture over the chops (on both sides). Place them on a plate, cover, and marinate for at least 3 hours (preferably overnight!).

Heat the remaining oil in a pan. Be careful not to let it smoke. Place the chops in the pan and cook them for 1-2 minutes on each side. Then add the gin and cook over moderate heat for 5 minutes. Pour in the apple juice, stir, and bring to a boil. Once the sauce boils, cover the pan with a lid and simmer gently for 10 minutes.

Remove the chops from the pan and place them on a serving plate. Set the pan aside and season the sauce with salt and pepper, then stir. Serve the chops on plates, pour the sauce over them, and enjoy.
