Pork Chops with Pizzaiola Sauce
Pizzaiola is a sauce that resembles pizza sauce, as its basic ingredients are tomatoes, garlic, and oregano. For added flavor, we included some pickled capers, poured it over the seared pork chops, and created a quick dish that pairs well with various side dishes.

Peel the garlic and finely chop it. Wash the tomatoes and blanch them in boiling water for 1-2 minutes to remove the skin. Cool the blanched tomatoes, peel them, and finely chop them.

Heat a tablespoon of olive oil in a pan. Add the chopped garlic and quickly sauté it. Stir in the tomatoes and cook the sauce over medium heat for 10 minutes, stirring occasionally, until it thickens. Season with salt and oregano to taste.

Add the tomato sauce and capers, which have been rinsed under running water. Cook the dish for another 2-3 minutes over moderate heat, then serve on plates, sprinkle with chopped parsley, and accompany with your chosen side dish.
