Ingredients
-
2 spoons Oil, olive
-
1 kg Meat, pork, shoulder
-
pieces Salt, table
-
1 piece Onion, raw
-
2 pod Garlic, fresh
-
2 dl Alcohol, Wine, Red
-
3 dl Water
-
2 piece Spices, bay (leaves)
-
0.5 spoons Spices, paprika
-
pieces Spices, pepper, black
-
1 kg Sauerkraut
Steps
-
Preheat the oven to 150 degrees Celsius. Season the pork chops, peel and finely chop the onion and garlic.
-
If you have a cast iron pot with a lid that can go in the oven, use that. Alternatively, you can prepare the dish in a pan and then transfer it to a baking dish. Pour oil into the pot, heat it, and sear the pork chops on both sides.
-
Remove the seared pork chops from the pot, add the onion, and sauté for 4 minutes over medium heat. Add the garlic, and when it becomes fragrant, pour in the red wine.
-
When the wine reduces by half, add water, bay leaves, paprika, and peppercorns. Stir, return the pork chops to the pot, cover it, and bake in the oven for an hour and a half.
-
After an hour and a half, remove the pot from the oven, add the sauerkraut around the meat, and mix it with the sauce. Return the pot to the oven for another 20 minutes, this time uncovered.

Advice
If you want the sauerkraut to be softer, add it after an hour of baking so it can cook or bake longer. If the sauerkraut is very sour, you can quickly rinse it under running water.
