Pork Medallions in Creamy Cheese Sauce

Ingredients

1.5 spoons Oil, vegetable oil, canola

600 g Meat, pork, pork fish

250 ml Sweet cream

80 g Cheese, edamame

Rinse the pork tenderloin under running water and pat it dry with paper towels. Cut it into 1.5 cm thick medallions, lightly season both sides with salt and pepper.

Place a pan with oil on the stove. Once the oil is hot, add the seasoned medallions and sear them until golden brown on both sides. Remove the seared medallions from the pan and keep them warm on a plate.

Pour the cream into the pan and use a spatula to scrape the bottom well, releasing all the caramelized bits that formed during the searing of the meat. Add the grated cheese and stir continuously until the cheese is fully melted. Season the sauce to taste with pepper and salt.

Return the seared medallions to the pan with the sauce and cook everything together over moderate heat for another 2 to 3 minutes (be careful not to let it boil). Remove from heat, plate the medallions, and pour the sauce over them. Serve the prepared dish with your chosen side.
