Pork Medallions in Creamy Mushroom Sauce
Very tender and juicy meat in a delicious mushroom sauce with cream. One of those dishes that wont require you to spend hours in the kitchen, yet youll be absolutely delighted with the result despite the quick preparation. You can serve it with mashed potatoes, croquettes, breaded cutlets, gnocchi, pasta, or bread dumplings, or choose healthier sides like boiled rice, buckwheat porridge, or quinoa. Whatever you choose, youll definitely clean your plate to the last drop!

Ingredients

1 spoon Oil, plant, sunflower

600 g Meat, pork, pork fish

2 spoons Butter, salted

2 piece Shallot

250 g Mushrooms, mushrooms, fresh

1 pod Garlic, fresh

0.5 teaspoons Thyme, fresh

300 ml Soup base, chicken, cube

100 ml Sweet cream

1 teaspoon Mustard

Clean the mushrooms with a damp cloth and trim the ends of the stems. Slice them into thin pieces, and smaller mushrooms can also be quartered.

Lightly season the medallions with salt and pepper on both sides. Peel the shallot and garlic. Crush the garlic and finely chop the shallot.

Heat a pan and add oil. Once the fat is hot, place the seasoned medallions in the pan and sear them until golden brown on both sides (about 2-3 minutes per side). Transfer the seared medallions to a warm plate and cover them to keep them warm.

Add butter to the pan where the meat was cooked. Once it starts to foam, add the shallot and sauté until translucent. Add the mushrooms and quickly sauté them until they brown and soften. Lightly season the mushrooms with salt and thyme while sautéing. Add the garlic and sauté everything together for another minute, stirring constantly.

Pour in the broth and use a spatula to scrape the bottom of the pan to release all the caramelized bits that formed during sautéing. Stir in the cooking cream and, if using, the mustard.

Return the seared medallions to the pan along with any juices that have accumulated while resting. Let everything simmer over medium heat for another 3-5 minutes. Taste the sauce and adjust the seasoning if needed.

Serve the prepared dish with your chosen side.
