Pork Neck in Onion Sauce

Ingredients

800 g Meat, pork, neck

pieces Oil, vegetable oil, canola

3 pieces Onion, raw

2 pod Garlic, fresh

pieces Tomato, concentrate

0.5 l Soup base, beef, cube

2 piece Spices, bay (leaves)

Steps

Wash the steaks and dry them with paper towels. Season both sides with pepper and salt.

Peel the onion, cut it in half, and slice it thinly (you can also chop it finely). Peel and chop the garlic.

Place a pan on the stove, heat it, and add about two tablespoons of oil. Once the oil is hot, place the seasoned steaks in the pan and sear them until golden brown on both sides. Remove the seared meat from the pan and set it aside on a plate.

In the same pan where the meat was seared, add the onion and sauté it until it softens and turns slightly brown. Add more oil if needed. Add the chopped garlic and tomato paste to the sautéed onion. Continue to sauté for 1-2 minutes, stirring constantly, until the garlic becomes fragrant. Then, add half of the broth. Use a spatula to scrape the bottom of the pan to release all the caramelized bits that formed during searing. Let the sauce simmer gently.

Add bay leaves to the sauce and season it to taste (use paprika, thyme, and if needed, salt and pepper). Pour in the remaining broth, mix the sauce well, and then return the seared steaks to the pan along with any juices that have collected on the plate.

Cover the pan and cook the steaks over medium heat for 10 minutes. Stir the sauce occasionally. After 10 minutes, uncover the pan, increase the heat slightly, and cook for a few more minutes to thicken the sauce. If you want the sauce to be even thicker, you can remove the steaks and bay leaves and blend the sauce with an immersion blender.

Serve the prepared dish on plates. Offer breaded rice, mashed potatoes, bread dumplings, or prepare another side dish of your choice alongside it.
