Pork Ribs in Wine Sauce

Ingredients

2.5 spoons Oil, vegetable oil, canola

1.4 kg Meat, pork, ribs

0.5 teaspoons Salt, table

0.25 teaspoons Spices, pepper, black

3 dl Alcohol, Wine, Red

2 pod Garlic, fresh

2 pinch Spices, ginger, ground

2 pinch Rosemary, fresh

3 pieces Spices, bay (leaves)

200 g Tomato sauce, without salt

120 g Olives, black, in brine

Drain the olives well, place them in a multipurpose grinder, and grind them finely. Wash the meat and dry it with kitchen towels. Remove most of the outer fat, then season the meat with pepper and salt to taste. Peel the garlic and chop it finely. Place it in a bowl and mix with dried rosemary and thyme.

Place a larger pan on the stove and heat the oil. Sear the seasoned pork ribs on all sides in the hot oil.

Pour in the red wine and simmer on moderate heat until most of the wine evaporates. Then add the spices and bay leaves. Simmer for another 6 minutes to thicken the sauce. If the sauce is too thick, you can thin it with a little more red wine.

Finally, stir in the pureed tomatoes and ground black olives. Simmer the dish on low heat for an additional 20 minutes.
