Pork Ribs with Chili Chocolate

Ingredients

350 g Meat, pork, ribs

1 spoon Miso

1 teaspoon Spices, caraway, seeds

1 teaspoon Chili peppers, red chili, dried

2 spoons Tomato, concentrate

1 spoon Spices, ginger, ground

1 pinch Salt, table

70 g chocolate, dark

3 spoons Oil, olive
Steps

Thoroughly rinse the ribs under running water and dry them well with paper towels. Place them in a larger bowl. If desired, you can also cut the ribs into individual pieces.

In a bowl, mix miso paste, ketchup, chili, ginger, salt, and allspice to form a thick mixture. Rub the ribs well with the mixture on all sides. Grate chocolate over the ribs and drizzle everything with oil. Store the ribs in the refrigerator overnight.

The next day, take the ribs out of the refrigerator and let them come to room temperature. Preheat the grill to medium-high heat and place the ribs on it. Cook them for 4 minutes on each side to get a nice crust, while still remaining juicy inside. While cooking, you can baste them with the marinade from the bowl in which they were marinated.

Serve the ribs while still warm.
