600 g Meat, pork, ribs

0.5 teaspoons Salt, table

2 pinch Spices, pepper, black

2 teaspoons Rosemary, fresh

1 twig Rosemary, fresh

2 spoons Oil, olive

2 piece Shallot

1.5 dl Alcohol, Wine, Red

Thoroughly wash the rosemary, pluck the needles, and finely chop them. Crush the juniper berries in a mortar. Preheat the oven to 200 degrees Celsius. Wash the ribs and use a knife to remove excess fat. Season them with salt and pepper to taste. Rub the meat well on both sides with the mixture of juniper berries and rosemary. Wash the young onion, peel it, and cut it into quarters.

Lightly oil a larger ovenproof dish and place the ribs and onion inside. Drizzle them with a little oil and wine.

Place the dish in the oven and bake the ribs for 20 minutes. Then reduce the temperature to 180 degrees and bake the ribs for another 15 minutes. Remove the baked ribs from the dish, cut them into individual pieces, and pour the sauce from the dish over them. Serve with your chosen side dish.
